Guests enter the hotel through a paned glass door and check in at a mahogany desk in a cozy reception area. Behind the reception area is the hotel’s living room which houses the stylish Le Gaïac restaurant, complete with a roofed open-air terrace that overlooks the ocean and an infinity pool. Gentle tropical breezes flow through the restaurant day and night.
The hotel’s La Case Bar encompasses two bungalows with one side completely open to catch the ocean breeze, while the all-white upholstered furnishings found in the restaurant bar create a refined sense of chic style.
Under the watchful eye of Executive Chef
Stephane Mazieres, of French descent and a five-year resident of the Island, Restaurant Le Gaïac offers inspired French cuisine with native Creole accents. Lime lacquered grouper stuffed with mashed bananas and served with ginger sautéed potatoes is a favorite dish. The restaurant also takes advantage of its location by preparing a simply grilled Caribbean lobster from Le Gaïac’s aquarium. Each Tuesday evening, a local fish market is offered and guests can choose from a variety of freshly caught local fish served to their specifications. Unusual surprises abound, such as a delectable pasta dishes created tableside in a 35-kg cheese wheel. And, of course, the oh-so-French Crêpes Suzette, flambéed table side.

Villa Suites Hôtel Le Toiny’s 15 Villa Suites, dotted throughout the terraced landscape, are reminiscent of small plantation houses, with one side offering sweeping views of the ocean. Guests can step from any one of the three glass bay doors to each suite’s outdoor patio, complete with its own swimming pool, patio furnishing and pool toys. Each cottage is painted in a pastel mint, lavender or peach, reflective of St. Barts’ Caribbean style, with an interior design scheme further reflecting the heritage of the Island. Completely updated in a French Colonial style, the Villa Suites originally designed by Anne Nguyen and Beatrice David and were redone in 2009 by local St. Barts decorator Marielle De la Porte. A vibrant striped toile du soleil, originally from the Basque region of France, adds punch to the elegant dark hardwood floors, taupe walls and teak and mahogany furnishings. Throughout the 15 Villa suites, four different fabric color schemes are reflected in the toile window treatments and accent pillows. Color combinations include taupe and red, turquoise and green, mauve and beige, and a traditional blue-ivory colored toile, recalling classical Colonial print patterns. Original black and white photos of St. Barts add a sophisticated flair and infuse each suite with a sense of the Island. Bedrooms feature a perfectly replicated French Colonial four–poster mahogany bed, crafted in Martinque, and draped in traditional white gauze. Crisp white textiles, coupled with 350 thread count Egyptian cotton sheets adorn the bed. Each suite’s Italian tiled bathroom, open air shower, separate bathtub, dual sinks and bidets, benefit from natural light filtered through large windows. In-room features include satellite television, 40-in. flat screen televisions, DVD players, CD players, iPod docking stations, iPod music library and Wi-Fi. While St. Barts features no movie theatres, Hôtel Le Toiny offers a well-stocked DVD library including more than one hundred titles to entice even the hotel’s Hollywood clientele. In-room kitchenettes with a microwave, Nespresso® machine, ice machine, mini bar, dishwasher & fully stocked utensils ensure that guests are equipped with all necessary supplies for quiet nights in.
